7 Random Things
1. I am from the Philippines
2. I've worked with young people with dependency problems and community crisis centers.
3. I have two kids and I love children and I volunteer in orphanages.
4. My first love and my first and last sweetheart is my husband...hahhah...the relationship is still very strong after 17 years of marriage and counting.
5. I love cooking, baking, traveling, reading, blogging, Bible Study and gardening.
6. Me and my hubby is on scholarship grants for both our PH.D, hoping to graduate by March 2012.
7. The Lord has blessed us tremendously and am always sharing these blessings to everyone, they call me back home....Mommy A, ages=preschool to late adults...hahhaha....am in my mid-forty and laughing is my passion.

Ingredients:
1/2 kilo oxtail
1/2 kilo beef stripe
1/2 cup oil
4 tablespoons atsuete oil
2 heads garlic (minced)
2 medium sized onions (diced)
1/2 cup bagoong alamang
3 cup ground nuts or 4 cups of peanut butter
1/4 cup ground toasted rice
5 pieces eggplant (sliced into rings)
1 banana bud (cut to almost proportional to eggplant slices, blanch in boiling water)
1 bundle sitaw (string beans) cut to 2″ long
1 bundle pechay (bok-choy)
Salt and Pepper
Procedure:
1. In a casserole, boil oxtail, beef stripe. Lower fire and let simmer until cooked. Remove all scum that rises to the surface.
2. Drain, set aside then reserve the stock.
3. In a big wok, heat oil and atsuete oil and saute garlic, onion and toasted rice and nuts (if using nuts).
4. Add oxtail and beef stripe, pour in the stock, season with salt and pepper and add peanut butter (if using peanut butter).
5. Simmer until all flavors are incorporated, then add the vegetables.
6. Make sure vegetables is not over-cooked.
7. Serve hot with bagoong /or fish sauce and chili pepper

My life is amazing this week!
Friends from Seattle Washington visited us: we went Volcano trekking, fruits shopping, dining, attending worship service and reminiscing. Mr & Mrs. Betita are here for a Medical Mission Trip, the other members of the team are arriving this week. God bless the team for this mission outreach to the most disadvantage group in our society. We cannot join you for now, but you will be in our prayers.

And...here we go!
1. So many of us are happy and satisfied.
2. We can smile even in hardship.
3. Those who are accepting of self and others are the happiest ones.
4. God is waiting quietly.
5. Light is in both the thankful and grateful.
6. Love of all that is ordinary.
7. And as for the weekend, tonight I'm looking forward to preparing food for church potluck, tomorrow my plans include meeting with friends and Sunday, I want to attend my classes and shop with my daughter!
Thankful Thursday
Thank you Lord for a successful trek to Taal Volcano today....we enjoyed the hike though it was so hot and humid, dusty, and tired but seeing the volcano crater with it's majestic beauty was awesome in itself....the boat ride was so calm and peaceful, the people who guided us and later served a sumptuous lunch and the time we were able to contemplate on God's goodness to His creation.

Class Retreat: La Roca Trinidad
Class retreat happened last Saturday and Sunday.
We tackled the days program as follow:
Saturday : Groups Dynamics: Inner Directed and Self-Actualization Process. Everyone shared their visions in life and how to achieve each others goals in life. Testimonies were done late in the afternoon, with three visitors testifying God's leading in their lives. Emotions involved that day were mixed.We need some catharsis in the forms of tears, laughter, nervous discussions. Soon everything ended and all were refreshed. We topped the activities with swimming----hot springs galore....splashing all the way like children in a storm. Overnight singing, eating, talking. Oh! reality strike...I have an early 8 a.m. class....got to gooooooo.....am late from last night's outing...

MYM...my friend Lyn!
My friend and classmate Lyn Sta. Maria...in everything we really enjoyed great and small things....spas....talks....movies, we cry for a bucketful, food....class discussions, scents of lavender, our favorite, she gave me two bottles of it yesterday.....chocolates, in all shapes and flavors, local travels here and there, books, recently we read, "The Boy Called It" series, etc., etc., etc., and for Mellow Yellow Monday...here's for Lyn, here's for friendship!

Monaco Grand Prix. Wish, I could be there with them.Additionally, a wide selection of hospitality packages during the Grand Prix week-end is available to ensure everyone's absolute comfort, ranging from hotels, yachts, appartments and villas. If, I am not only tied with my work contract, I could fly myself and enjoy the show, for now, it would be the family glued to cable TV to watch.This is how to experience it somehow.Me and my family would be going for Webber and Schumacher.....cheers for our men!

This is Amazing!
PDF Viewer is small, fast, easy to use and can be integrated in my projects. It has even lots of features I have to discover.She sent me yesterday the brochure and I think this afternoon I have to see my computer technician to help me with this product. Well, in this world of techno magic, am still, kind of lost. I marvel at products like these, and when presented with one, my mind gets muddled at what they can do, but, I have to be ahead of my time and learn such thing. Good, I have friends around to show me and explain the in and out of such technology. This is a big help, but I need more help, huh!

photo book, these set of gifts I sent will surely seal the memories forever. I promise the two that come summer I will visit them and enjoy the pictures of the most memorable day of their life together. They have uploaded pictures in Facebook, and I had glimpses of what happened during the wedding. I got to shed a tear or two for this couple. They were my students, friends and now am happy that they are already a couple for keeps. Happy Wedding Jerry and Lei...Welcome to the world of married life!
